There’s no doubt that in this recipe the fig is the dominant character, with its crunchy seeds and powerful flavours bursting onto the taste buds. The flavours are good, and the health benefits are too. Dried figs are packed full of fibre, and are rich in vitamins and minerals. They also contain beta-carotene, benzaldehyde, and ficin which aid with digestion.
Combined with other dried fruits and nuts these no-bake cashew fig balls are an incredible little energy source.
The recipe makes 8 balls and can easily be made during the week for an energy snack. They will be perfect for when you’re feeling a little sluggish just before lunch time, or even mid afternoon. No-Bake Cashew Fig Energy Balls
- 1/4 C dried figs
- 1/2 C dried apricots
- 1/2 cashews unsalted
- 1/4 shredded coconut
- 1/2 tsp pink himalayan salt
- 1/2 tsp vanilla extract
- Add all dry ingredients together and place in a food processor. Blend until fine chunks (roughly 15 seconds).
- Add vanilla extract and mix well.
- Take a handful of mixture and form into a 1 inch ball. Place balls into an air tight container and set in fridge for 2 hours.
- Keep the balls in an air tight container in fridge for storage.
